We use a program called TrueCrypt to create a special encrypted file that secures all our personal and senstitive information.
TrueCrypt encrypted files are mounted so that they appear to Windows like a regular disk drive.
All the data stored inside these encrypted files look and behave to Windows like regular files, but are about as secure as we can possibly make them.
For additional security, these encrypted files are only kept on the Network Drive and not on the laptops local drives.
